-1 cup diced medium tomatoes

-1 ½ cups diced watermelon

-1 lime peel

-2 tablespoons grated peeled fresh ginger

-3 tablespoons of lemon juice

-½ teaspoon toasted (dark) sesame oil

-¼ teaspoon black cumin

-1 ripe avocado, cubed

-2 teaspoons of black sesame

-2 tablespoons of fresh mint leaves

-½ teaspoon sea salt


Stage 1

Transfer diced tomatoes and watermelon to a medium bowl.

Stage 2

Place the ginger in a fine-mesh strainer over a small bowl and press it to extract all the juice. Throw the dough. Whisk lemon juice, oil, and sea salt into the ginger juice.
