Molehiya Recipe
Molehiya is a dish prepared with the leaves of the molehiya plant, which grows in the Middle East and North Africa. This dish, which is very popular in Cypriot cuisine, is enriched with chicken on the bone. Served on a deep plate, this dish is served with rice and pickles.

Ingredients for Molehiya Recipe
130 g molehiya leaves
8 pieces bone-in chicken
2 tomatoes
1 onion
1 lemon
2 cloves of garlic
2 tablespoons of tomato paste
½ teaspoon of olive oil
Salt
Black pepper
How Is Molehiya Made?
First, soak the molehiya leaves in hot water. Then wash the leaves with cold water.
Put the olive oil in the pan and seal the chickens back and forth. Remove the chicken from the pot and rest it on a plate.
Fry the crushed garlic and chopped onions in the same pot.
When the onions turn color, add chicken and molehiya leaves and continue frying.
Finely dice the tomatoes. Prepare the tomato paste by mixing it with approximately 300 ml of water.
Add tomato and tomato paste and let it cook with the lid closed. Enjoy your meal.
