How to Make Jiaozi (Dumplings)

Mix flour and salt in a deep bowl. Add cold water gradually and knead well until you get a smooth dough.
Cover the dough with a clean cloth and let it rest for 30 minutes.
For the stuffing, clean the leeks, mushrooms, onions and garlic and grind them in a food processor.
Take the ingredients in the food processor in a separate bowl and mix them with minced meat. Add the remaining ingredients and knead well.
Take walnut-sized pieces from the rested dough and roll them on a floured counter with a rolling pin as thick as a knife blade.
Cut circles with the rim of a water glass. Repeat the process until all the dough is gone.
Add a teaspoon of minced meat to the middle of the dough you have prepared. Wet the edges of the dough slightly with water.
Then fold the dough in half. Stick it on the flat side of the dough by making small folds on one side.
Follow the same process until all the materials are used up.
Add olive oil to a non-stick pan and heat it. Add the ravioli you have prepared and fry them lightly.
When all the ravioli are browned, add the hot water or broth. Close the lid and cook until the water is absorbed. You can take the water from the stove and serve it.
You can serve the ravioli with a sauce consisting of vinegar, soy, sesame oil, garlic and spring onions.
