Bonito Soup

Bonito soup is made with vegetables, plain or seasoned. The whole bonito or the head and tail of the bonito are used to make bonito soup. In my recipe, I made a vegetable bonito soup by using the head and tail of 3 bonito that I made the lakerda. In making bonito soup, whether you use the whole bonito or use the head and tail part, the method of making does not change. Vegetables such as onions, garlic, carrots, potatoes and flavorings such as parsley, mint, black pepper, lemon juice, salt are used in making bonito soup. According to the method of making bonito soup; It is seasoned with egg yolk, flour and lemon juice. More than enough soup for 6 people is made from the head and tail of three bonito, each weighing one kilogram.

How I Made Bonito Soup:

I cut the bonito’s head and meaty tail in half. I removed the gills on his head, washed and drained. I put 1.5 liters of water and fish pieces in the pot. I boiled the pot and after removing the foams on it, I turned the stove down completely and closed the lid. I boiled the pot for 15 minutes, took it off the stove. Then I strained the boiled fish pieces and kept the water in a bowl. After the fish pieces had cooled, I cleaned the bones and skin and put them in a bowl.

I roasted a chopped onion, a grated carrot and a potato in 5 tablespoons of olive oil in a saucepan. I put the water of the fish I boiled on it and boiled it for 20 minutes with the pot covered. At the end of the time, I crushed the ingredients with a hand blender. Then I added the shredded fish pieces, boiled for 5 minutes and turned off the stove. I added salt, pepper and lemon juice to the pot and sweetened the soup. Lastly, I added finely chopped parsley and fresh mint to the soup and stirred the pot. After all, I made the delicious bonito soup.
