5 tortillas
4 slices of chicken breast fillet
1 teaspoon flour
½ cup of Mexican beans (optional)
1 red onion
2 chili peppers
3 cloves of garlic
3 small tomatoes

1/4 teaspoon ground black pepper
1/2 teaspoon ground coriander
For the enchilada sauce:
1 teaspoon flour
3 tablespoons of olive oil
1 cup of chicken stock
3 teaspoons of tomato paste
2 sprigs of fresh thyme
1 teaspoon ground pepper
1/4 teaspoon cumin
1/4 teaspoon garlic powder
For the above:
Half a bunch of parsley
1 cup cheddar cheese (grated)

First, cut the fillet chicken breast into thin and long slices. Mix it with salt and pepper.
Finely chop the onion and garlic. Remove the seeds from the chili peppers and chop them.
After peeling the skins of the tomatoes, cut them into cubes.
Add olive oil to a pan with a thick bottom and heat it.
Saute the chicken meat you have mixed on high heat and take it off the stove when it changes color.
In the same pan, first add the onions and garlic. When it starts to turn pink, add the pepper and tomato. Leave it to boil on low heat.
