A delicious recipe that you can make to your guests. They usually make this recipe by frying vegetables and meatballs. There is no grek. I cooked them all raw and covered. Then I uncovered it and fried it. It was both very light and delicious. If you do not cover and pre-cook, the zucchini may remain raw. You can also use eggplant instead of zucchini. Chicken minced meat can also be used instead of minced meat.
Baked Meatballs with Zucchini Recipe
Materials
2 medium zucchinis
7-8 medium potatoes
4-5 medium tomatoes
3-4 green peppers
For the patties
600 gr ground beef
1 medium onion
half a bunch of parsley
2 teaspoons of black pepper
1.5 teaspoons of salt
1 teaspoon of ground red pepper
For the sauce
1 tablespoon tomato paste
Half tea glass of olive oil
2 glasses of water
Some salt
Preparation
Slice the zucchini and potatoes in finger thickness. Knead the meatball mixture and make meatballs the size of vegetable slices.
Arrange one potato, one meatball, and a zucchini on a round tray (also with a rectangular tray). In this way, fill the entire edge of the tray.
Leave a little space and place another ring in the same way. Put the sliced tomatoes and peppers and small pieces of potatoes into the spaces in between.
In a separate bowl, mix the tomato paste, oil, salt and water and pour over the vegetables and meatballs.
Cover it with foil and bake in an oven at 200 degrees for 45 minutes.
Then remove the foil and bake for another 30 minutes. When it is lightly browned, it is okay.
